Honey processing is a coffee cherry processing method which originated in Costa Rica. It's a "mucilage-on" fermentation step which allows the coffee to develop a unique floral quality. Recently, it has garnered such popularity that it has spread to many other Central American countries.
Medium roasted to bring out the characteristic Costa Rican dark-cherry colour and sweetness with a syrupy licorice finish to complement.
Brew it either hot or cold for a beautifully balanced coffee that pairs exceptionally well with both sweet and savoury afternoon snacks.
